Fool-Proof Instant Pot Yogurt
Today, we’re going to show you how to make truly spectacular yogurt in your Instant Pot. Honestly, every day I think I can’t possibly love my instant pot anymore than I already do, but then it just proves me wrong. Fair warning: this yogurt will spoil you for store-bought yogurt for life. But it’s so easy to make, and I could see it becoming a wholesome morning routine. For mum, it would be a nighttime routine. And sometimes she’d rope me in to do some aggressive stirring to take out any lumps.
You know what would be lovely? Rose flavoured yogurt. But that’s for another day. For now, here’s the recipe for fool-proof plain yogurt, and let us know if you make it!
RECIPE: INSTANT POT YOGURT
Ingredients
3 cups full fat milk
3 tsp yogurt (starter)*
1 tbsp milk powder
Method
In a large bowl, whisk the yogurt to remove lumps and smoothen.
Add the milk powder and whisk again to fully incorporate. Ensure no lumps form.
Heat milk to lukewarm. You should be able to dip your pinky into it comfortably.
Add a few spoons of the milk to the yogurt, mix well to thin out the mixture and then pour the remaining milk.
Pour into a glass/ceramic container.
Add a cup of water to the Instant Pot, place a trivet in it (your IP probably came with one, go check!)
Carefully lower the container onto the trivet, close the lid.
Turn on the Yogurt mode, and choose 4 hours.
Set the valve to Seal.
When done, turn the valve to release, open the lid and carefully take out the yogurt. It should be only slightly wobbly at this point.
Transfer to the fridge and the next morning, you will have perfectly set, creamy yogurlt.
Will keep refrigerated for a week.
The next time you’re making yogurt, use a spoon from your previous batch of yogurt. And there you go, you have your own starter.
*For the initial starter, I like to use Akshyakalpa’s packet curd. I’ve made it using Epigamia’s greek yogurt (because that was what I had that day,) and that was fine too. I haven’t used the yogurt made from Epigamia as a starter however, and maybe that won’t have enough active cultures to set it?
